My husband was watching a kitchen show on tv a few weeks ago and went bananas over this steak recipe. The idea is to baste the steak before cooking with oil, sear on stovetop, stick in the oven and then melt butter in the pan and spoon the melted butter over the steak.
Charming Craig tried it first. He wanted Canola oil. (ewe.) On the show Craig watched, they had used a cast iron skillet, but we didn’t have one because we have a glass top stove (soon to be gas, whoo hoo!!!!) We used a stainless-steel skillet. I think Craig was scared to put the heat up the skillet on high, because the steaks were not seared. They did turn out well, though, and we both enjoyed them.
The next week it was my turn to try. I used a copper stick free skillet. I also used olive oil. After searing the steak in the oil, I popped two peeled garlic cloves into the pan. Put the pan into the oven. Cooked at 375° until internal temperature reached 150°. Pulled them out, melted the butter in the pan with the steaks, spooned the butter over the steaks and enjoyed. They were amazing, but I was not afraid of high heat. The house filled up with smoke. And my pan is not pretty anymore. See?
So my husband and I were tied. We both tried our version of this steak dealio and in some way, it just wasn’t perfect. Then…… Saturday, the UPS driver arrived. Charming Craig said, “You have a present”. I lifted the box and I KNEW! A cast iron skillet!
It took no time to have the ribeye out of the fridge. Because of the smoking last time, I decided to try coconut oil. I sprinkled both sides of the steak liberally with Alpine Touch seasoning, then poured a thin stream of coconut oil over steak and painted it all over the steak with a marinade brush. The steaks went into the heated cast iron skillet for two to three minutes per side. Then after a nice sear has crusted both sides of the steak, put 2 peeled garlic cloves into the pan and place the pan into a preheated (375°) for 8 to 15 minutes until steak reaches 140° to 150°. Once the steaks have reached the desired temperature, take out of oven and put 2 tablespoons butter into the pan to melt. Once the butter has melted spoon over the steaks. Gently rub garlic cloves over the steaks, also. Enjoy!!!
