My husband and I becoming a family in our 40s meant we already had dishes. He had a set of china from his family. I had a set from mine. We each had our everyday dinnerware. Then we tried to combine all of our stuff. Well....His everyday dinnerware was the fist to go, because it was ugly. Then mine started to go because I had kids leaving the house and starting out on their own. I also had a new love affair with multi colored Fiesta Ware. Over the next several years I would get a set or two for holidays and special occasions. I ended up with 14 different colors (even beating my husbands china collection for 12)! Then, last Tuesday, without a holiday in site, my husband said he had a present for me. It was six SQUARE Fiesta plates. 3 purple and 3 orange, and the most beautiful red Fiesta casserole dish I have ever seen! I immediately got on Pinterest to find a recipe to put in it!! I finally settled on Funeral casserole, because I hadn't had it for several years (Thank you Baby Jesus), and I remembered how good it was. I wanted to change it up a bit, though. Usually it is made with Cream of Mushroom soup, but I switched that out for Cheddar Cheese soup and I added green onions. Delish!!! Pretty, too. If you try, it please let me know what you think!
